Berry Muffins for Two


Ingredients:
  • 3/4 cup oat flour (I grind my own using oats and a blender)
  • 1/4 cup demerara sugar
  • 1/2 tsp baking soda
  • 1/4 tsp cinnamon
  • 1 egg
  • 1/4 tsp vanilla
  • 1/4 cup Greek yoghurt
  • 1 tbsp olive oil
  • 1/4 cup mocha*
  • 3/4 cup frozen berries

Directions:
  1. Preheat (convection) oven to 350ºF. Grease 2 ramekins.
  2. Mix together all the dry ingredients in a medium bowl.
  3. Add in the rest of the ingredients, sans frozen berries, and combine until partially mixed.
  4. Add in the frozen berries and lightly stir to completely mix.
  5. Evenly distribute the batter into the ramekins. These make large servings.
  6. Bake for 25 minutes, or until the tops are golden and when touched are not firm, but slightly "wiggly". They will firm up as they cool.

Notes:
  • I used mocha just because I had some sitting around in the fridge. Though I have not tried, I don't see why milk or strongly brewed coffee won't work. The mocha, however, lends only a very light (if any) flavor. It's nearly undetectable. 
  • This can also be made in the microwave. Grease 4 mugs and equally distribute the batter into each cup. Microwave each cup separately for 40-60 seconds so it can cook evenly.
